What is a Cologne tour without a stop for the city's famous beer – Kölsch? You are now in front of Brauhaus FRÜH am Dom, which is less of a hotel and more of an institution when it comes to Kölsch. Since its establishment in the early nineteenth century, this brewery has been central to Cologne's vibrant social and gastronomic scene. You'll immediately notice the warm, rustic atmosphere that is so characteristic of Cologne. The Köbes, the traditional beer waiter, will greet you with his charming wit, serving freshly tapped Kölsch and classic Cologne dishes. Originally established by Peter Josef Früh in the former Central Theater building, the brewery quickly became a cornerstone of Cologne’s brewing tradition. Now, let's address the main attraction: Kölsch. Kölsch is a top-fermented local beer style from Cologne, Germany. Kölsch beers are characterized by a subtly fruity yeast note in both aroma and taste, along with a pleasant hoppy bitterness. Although the history of Kölsch dates back to the eighth century, one of the most significant events occurred in the late eighteen hundreds. During this time, pale lager imported from Bohemia, called ‘Pilsner,’ was gaining popularity in the local market. In response, the Cologne brewers guild decided to create their own pale beer to compete. Thus, Kölsch was born. In March nineteen hundred and eight-six, the brewers of Cologne reaffirmed the definition of a true Kölsch. They defined it as a light-colored, highly fermented, strongly hopped, bright, top-fermented full beer. They also stipulated that it should be served in a 0.2-liter, tall, straight Kölsch “Stange” glass and exclusively produced by Cologne brewers. Furthermore, the Cologne brewers defined specific gravity, fermentation temperature, and an alcohol by volume of 4.8%, making it difficult to replicate elsewhere. One distinctive feature is the 0.2-liter glass in which the beer is served. This is because Kölsch is a top-fermented beer and its taste can degrade if it remains in the glass for too long.
